I've been looking a long time for the perfect ginger cookie. This is it!! Crispy on the outside and chewy on the inside. Even the next day the cookies are chewy, if they last that long. Just make sure you don't over bake them. The longer they bake, the crisper they become. They don't last long in my house. "

The only other change I made was that I sauteed the anchovies in the oil with the onions and garlic till the anchovies dissolved. I've made this recipe many times, and every time it comes out delicious. I've used my old faithful cast iron pan, buttered it well, and the pancake slides out very easily. Sometimes I make this for dinner.........add some bacon and you're all set!!
