The aging process and starting at a low temperature work really well. I have never been disappointed with this method and I don't even use the terra cotta cover.

Reviewed The Oatiest Oatmeal Cookies Ever

They are indeed very "oat-y" and that's a good thing. Mine didn't spread out as much as other people commented but they were very crumbly. Also, I used dried cherries instead of raisins. I would definitely try making them again and recommend them for anyone who likes oatmeal cookies.
