Reviewed Indian Summer Stew: Butternut Squash, Coconut, and Lentil Stew
"YOU GUYS! This soup was amazing! I don't even like butternut squash so I was apprehensive, but I trust Aarti and didn't remove or substitute it and it came out just fantastic. The flavours in this soup are just so pronounced: the coconut, the spices, the lime, but it all works so well together and the squash just soaks it up. I haven't stopped raving about it since we made it, and I'm already planning on serving it for a dinner party we're having next weekend. Highly recommended!
