So good! I've made it multiple times now & it is part of our regular dinner rotation. I always use double of the Essence seasoning & one eggplant is all we need to feed a family of four. Talk about an economical recipe in hard times, this is a no-brainer recipe to have! I also have paired this up with chicken drumsticks on my Foreman grill. T"
