Reviewed Pumpkin Soup with Chili Cran-Apple Relish

Very yummy. I goofed and put 3c of heavy cream instead of 2 so i just added an additional 16oz can of pumpkin puree and it was just right. Definately add pumpkin spice if you want to amp up the pumpkin flavor...and I added more salt and a few extra dashes of hot sauce and used thyme instead of poultry seasoning. The recipes says season to taste...

All the reviews are absolutely correct. Alton's method of brining and using a foil breast plate is phenonomally spot on...and delicious. Definately let it rest for hose 30 minutes.
