This was amazing!! even better the next day. My daughter doesn't eat meat, so finding a satifying dinner for her is difficult when the rest of us are eating meat. I mixed in a can of cannellini beans with the cauliflower to give it protein and everyone loved it. I would definitely make this again, next time though, just blanch the cauliflower....
