This was a GREAT recipe, thank you very much for sharing. I love popovers, and this is the only recipe I';ve found that allows the addition of cheese and then actually "pops over". This recipe is spot-on! The ribs have great flavor, with a hint of smoke (from the smoked salt), and they are juicy and succulent - but not too "wet". The only change we made was adding additional kosher salt to the rub (about 1 tsp).
