Reviewed Chile and Cheese Rice

Nov 11, 2012 in Food Network Community Toolbox on FoodNetwork.com

This is the best rice I have ever had! I don't even like rice that much but with that melted gooey cheese it's divine.

My friends like it so much they ask for it all time.

I added some salt to the rice before cooking it so it wasn't bland."

Yummy shrimp!
Wayy better than any Mexican Seafood restaurant.
Thanks to Marcela I will not have to order these again!
They're absolutely delicious, I also used cilantro instead of parsley because that's what I had on hand and I didn't want to go buy any parsley."

I love most of Marcela's recipes but this one is my favorite. I brought some to work and my co-worked not only asked for the recipe, she made it the same day. She said everyone kept asking her for the recipe as well.

My favorite part is the rice soaking up all the yummy cream sauce. Will be making this over and over."

Awesome recipe!!!! easy to make! I didn't put walnuts because I didn't have any but the combination of the Marias and the egg whites cooked was awesome. I call this the Mexican version of an Angel Food cake.

Everyone loved it!!! I will make two next time."

Reviewed Zucchini-Tortilla Casserole (Pastel Azteca

OMG this dish is awesome! It's a combination of an enchilada casserole and chilaquiles in one dish!

The tomato mixture is delicious, the veggies, the cream and the cheese! I could become a vegetarian now! it's that good!

I used more poblanos and less zucchini. I like zucchini but 3 of them were too much for my...

Reviewed Sweet Strawberry Tartlets

Aug 1, 2012 in Food Network Community Toolbox on FoodNetwork.com

I made about sixty of these for Mother's day and everyone loved them.
I used the store bought mini graham cracker crusts and they were decent. I could just eat the fluffy filling on its own. It people didn't taste a lot of strawberry, they didn't use enough. Make sure you beat the sour cream and sugar very well before you incorporate the...

This sandwich is awesome!!!! The chipotle mayo is delish! I am going to start using it in all my sandwiches now.
Very easy to make, I cut the chicken in smaller pieces so it would cook faster, I have cheap olive oil so I didn't want to mess up my sandwhich so I didn't add the vinegar or the oil. It's probably much better that way. My husband...

Reviewed Lime Cream Trifle

Jun 28, 2011 in Food Network Community Toolbox on FoodNetwork.com

I love this trifle. I was so excited to see it on TV I have been making this since I was like 7 years old but I had never used lime zest and it brightens up the flavor a lot. The reason why the crackers float is because they're not mixed in properly with the limes. I always use at least 5 limes and it stays nicely. If you notice that its floating "

Reviewed Sour Cream Cheesecake

Jun 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

The flavors are excellent, I usually buy the premade graham cracker crusts but for some reason the consistency is very soft. I like the cheesecake to be firm. I do not own a spring form pan so I don't know if that might be the reason. I tried cutting back on the sour cream and beating less time but it gave me the same texture. Any suggestions?"

Reviewed Creme Brulee

Jun 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

Creme brulee is the best dessert in the whole wide world but I usually have to pay $8.00 to get a decent one at a restaurant and thanks to Alton I can say mine is just as good or even better than those expensive ones now. I followed the recipe to the T but one of the times that I made it I didn't have vanilla sugar so I decided to add some vanilla"

Reviewed Roman-style Chicken

Jun 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

Awesome recipe!!! I've made it numerous times and people always want more. I usually use chicken breasts and they are just as flavorful and easy to work with. I used San Marsano tomatoes and those are super sweet so the spice on the pepper offsets them very well. I ommited the capers because I'm not a fan, the herbs smell so good, I love cooking t"

Reviewed Mexican Rice Pudding ("Arroz Con Leche"

Jun 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

I love Marcela's recipes. They're so easy and full of flavor, I loved the arroz con leche but it was too sweet for my taste buds. Next time I will add a little bit of the rice water and not put so much condensed milk. The cinammon and raisins give it a nice flavor also."

Reviewed Chicken Enchiladas

Jun 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

I love green enchiladas and tried to make them several times and they were horrible. When I watched Marcela's show I decided to give them a shot and everyone fell in love with them. They came out better than my Mom's. I made them twice in one week and people keep asking for the recipe. First time I made them they were very hot because of the guero"
