Excellent dish. I didn't bother with the mushroom broth. I simply used a low salt vegetable broth and added a bay leaf. I also used red wine to give it a rich color. We had this as our meatless Monday dinner with a simple salad. I would do this dish again and serve it with lamb loins from the grill. "
