This is the best roast poultry I've ever made. Roasting at 450 resulted in a beautiful, brown and moist bird. I used swiss chard (instead of arugula) and added a pound of uncut portofino mushrooms. Beauty truly can be found in simplicity!

this recipe was quick and easy, used lobster claw meat from Costco. Excellent on croissant as Saturday night supper, So fresh tasting, great flavor and texture. I followed the recipe exactly as instructed. Especially love the fresh tarragon. "
