"I have been making these cookies for about a year now. I think these cookies are awesome. My family asks me to make them all the time. Sometimes we have lasagne just for an excuse to buy the large, warehouse store size tub of ricotta so we can make cookies. Ocassionally I make homemade ricotta. It is fun and easy. If you use really good, fresh, whole milk it will make a huge difference. Especially in calzones, and my favorite, homemade spinach lobster ravioli with a garlic basil cream sauce, made with homemade creme fresh.
