Had a pound of stew meat and over a pound of lean trimmings from a whole tenderloin I trimmed and prepared for Christmas dinner. Browned then braised the stew meat for an hour and a half in the original recipe, then browned and added the tenderloin pieces at the end of the braise. Both meats were cooked perfectly. Fabulous!

Was the beef covered by the cooking liquid sufficient for it to cook properly? If the liquid does not cover the meat or it cooks off and the meat is exposed, this will reduce the effectiveness of the braise. My guess is the beef was not tender because it was not braised long enough.

This is a superb eggplant parmesan. To ease the preparation and help with cleanup, I found using disposable aluminum pans for the breading station, storage for breaded eggplant before and after frying, etc., to be a very good idea. Just toss in the trash after use. Also, instead of a skillet to fry the eggplant, I used an old turkey roaster placed...
