I made gingerbread men cookies and shipped them cross country for Christmas. They were still soft when they arrived and several of my family members asked for the recipe. I did chill the dough overnight, and I rolled out the dough with confectioners sugar instead of flour. I baked the cookies only about 7 minutes because I prefer a chewer cookie....

I made this the day after Christmas for a lighter lunch given all of the heavier holiday meals. I used canned beans and it could not have been easier. My only substitution was that I browned and sliced italian sausage links instead of pancetta. I don't eat kale often, but it added a nice texture and flavor. The oven-toasted crostini for dipping...

Reviewed cheesy broccoli, chicken and rice casserole

This version has more flavor than the basic versions with velveeta and cream of mushroom soup. I used standard basmati rice and I did have to cook it about 55 min (vs 40 mentioned in recipe) to get the rice cooked and liquid mostly absorbed. An easy weeknight dinner I will make again.
