I have to wonder if I am the only one who caught the directions to pour the batter into a "sheet pan". If you bake this in a 9x13 pan, obviously it will take far longer to bake. However, I can assure you that following the directions does work. I used a half-sheet pan and increase the cooking time accordingly with great results. Next time you want to call out an accomplished chef like Paula, make sure you follow her instructions first."

And to the reviewer complaining about the texture and wanting a vegan version, how about making your own vegan version instead of expecting others to do the work for you. Your dietary choices are your own. Stop expecting others to modify their work to suite your own desires. I'm so tired of seeing vegetarians spout that someone "needs to make a vegetarian version" of every freaking dish out there. Some poor, helpless plants DIED to bring you that salad.
