Whenever I make a roasted pork loin I always roast it on a bed of butternut squash, onions, carrots and sweet potatoes. So I take the left over vegetables and add the oven roasted apples to make this wonderful soup. The condiments are a nice touch--very much like what one used to experience in British-inspired Indian restaurants in the 1970's.

This will be my fifth Christmas making Ina's standing rib roast. It is the best recipe I have ever used. I served it with her vegetable tian and popovers--which I add some gruyere for some added richness. And the horseradish sauce is amazing.

Yesterday I made a slight change and substituted orange zest for the lemon zest and really loved the flavor boost. These are SO easy to make--they're great as "silver dollar"-sized pancakes, too....
