"Oh my! I am NOT an eggplant person. My hubby decided to grow eggplant this year and we're trying different recipes. This one is to DIE FOR!! We didn't have goat cheese, so we used feta. The balsamic vinegar totally balanced out the feta and it was just delicious! I think I want to serve this with a favorite lamb dish! Thank you Giada!""
