Reviewed Mediterranean Quiche

I made this quiche in large numbers for a brunch baby shower. It was easy to triple the recipe and I followed the recipe exactly except that I reduced the pepper. I made other dishes, but this was hands down the most popular. It's a delicious vegetarian dish!

This is a perfect recipe that I make all the time. Sometimes I roast sliced lemons and whole garlic cloves with the sprouts to step up the flavor.

This soup was amazing. I served it with corn bread and my guests dipped the corn bread in the soup and loved it. I didn't have buttermilk, and replaced the buttermilk with 1/2 cup of cream. Worked out well. Also, I don't have an immersion blender, so I used an upright blender that I ladled the soup into and pureed it. It was a bit tedious, but well...
