dear chefs,
I have not made this recipe, but I just saw the show and I really want to. One problem, I am a huge baby when it comes to fire and have to give myself a pep talk just to light the smallest burner on my gas stove when the pilot is out. So the flambé part is a bit of a problem for me...what do you think? can I go without doing...

Mmm...I love this soup. True, I did alter the recipe a tad but for the haters out there, isn't that just a part of cooking? altering recipes to your palate? Anyway here's what I do: unfortunately, leeks and produce in general is kinda inconsistent where I live so sometimes I get leeks that are huge, sometimes the just look like chubby scallions...based...

This is a great recipe but I found this dish incredibly salty! Prob my fault b/c I am a total cheese junky and tend to add heaping portions to all recipes, so I might have added more gorgonzola than the recipe calls for. Also, I used italian sausage, and poured the oil/drippings from the pan into the mascarpone mixture. The end result was delicious...
