I've never been disappointed by one of Tyler's "Ultimate" offerings. His tip for preparation helped tremendously. I'd love to upload some photos because the presentation turned out amazing (food blog amazing) but alas, no option for that in the review.
This is one of those meals where the diners do the "Oooooh" and "Ahhhh" thing. So gratifying!...

If you're going to try it, invest in a good thermometer, REAL fleur de sel (you only need a tiny bit, so if you can find a spice shop selling it in bulk, that's the way to go) and good quality dairy heavy cream.
