Reviewed Creamy Coconut Chickpeas with Sweet Potatoes

Mar 31, 2014 in Recipes on Cooking Channel

Made this recipe last night and it was delicious!!! Even the other non-"Eat to Live" people in the house loved it! I had Trader Joe's roasted red pepper sauce that I used as a short cut for the roasted red peppers. I'm sure you could also use a can of diced tomatoes instead of fresh if you needed to as well. There were lots of grea"

Reviewed Lemon Broccoli Rabe

Jun 14, 2013 in Food Network Community Toolbox on FoodNetwork.com

I'm new to broccoli rabe, so the first bite is still a bit strong! As others have said, this worked really well with the garlic and lemon to cut down on some of the bitterness. I followed the instructions exactly and it was also perfectly cooked! Really enjoyed it and will make it again."

Perfectly crunchy! As another reviewer mentioned, I used coconut oil in place of the veggie oil to make it a bit healthier. I also used walnuts instead of cashews and dried cranberries along with the raisins. It is totally versatile, so try what nuts and dried fruits you like! I will definitely be making this weekly!"

Reviewed Veggie Mini Burger Pita with Cucumber Yogurt Sauce

Mar 28, 2013 in Food Network Community Toolbox on FoodNetwork.com

Tasty little bean burgers! I agree with others reviews that this is a great recipe but you could certainly add more veggies to spice it up a bit. Mine were a little on the dry side, but I think it is because I have to use gluten free bread crumbs which absorb much more liquid than panko. So next time I will go easy on the bread crumbs. The sauce w"

We loved this method of preparation! It was so easy. I doubled it and it still just took an hour to cook. The problem I have with my rice cooker is that the rice is always very moist and sticky. The result using this method was a wonderfully textured rice, that had a nice toothsome bite to it! We really enjoyed that about it. Held up fabulou"

Reviewed Ginger-Lemon Oatmeal Cookies

Feb 19, 2012 in Food Network Community Toolbox on FoodNetwork.com

A perfect blend of flavors, with none being too strong. I followed the recipe exactly, but only had walnuts, so used those instead. I did not have any trouble with spreading, I think because I kept the batter in the fridge in between trays. Really a great cookie that is a bit different than the usual! Thanks Melissa!""

Reviewed Roasted Sweet Potatoes with Honey and Cinnamon

Feb 19, 2012 in Food Network Community Toolbox on FoodNetwork.com

This was a fabulous way to do something a little different with sweet potatoes! Even got my 11 year old son to eat sweet potatoes! As other reviewers suggested, I added just a touch of cayenne pepper, which gave it a nice kick. I also stirred them before putting them in the oven to evenly distribute the glaze, as well as a few times when cooki...

Reviewed Baba Ganoush and Pita Crisps

Oct 2, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was something new to me, and I was pleasantly surprised by this dip! It was light and fluffly, and full of flavor. I put some of the toasted pine nuts into the food processor mixture, as well as adding whole ones at the end. Next time, I may add some white beans or chic peas to give the dip a little more body. Oct 2, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was very easy and delicious! Put it together before the football game and had a delicious meal of pure comfort food waiting for us at dinner time. The only thing I will change next time is to use a 1/2 cup of red wine instead of 1 cup, and then increase the beef broth by a 1/2 cup, as it was a little strong flavored for some in my family. I...

Reviewed Raspberry Crumble Bars

Sep 11, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was soooo delicious, we had to stop ourselves from eating the whole pan in one sitting! It was very easy to make. 8x8 was a little small, so I will be doubling the recipe next time. Also, my dough was not real "crumbly", as I might have over mixed it just a bit. It didn't affect the outcome though...I just broke it into pieces onto the top...

Reviewed Eggplant Rollatini

Sep 3, 2011 in Food Network Community Toolbox on FoodNetwork.com

Grilling the eggplant was a great alternative to the less healthy and more time consuming fried eggplant. I thought not frying it might end up in a less tasty dish, but I was wrong! It was delicious! I used my own sauce that I had in the freezer. I also skipped the pine nuts and it was still wonderful! I did not use as much sauce as in the p...

Reviewed Simple Birthday Cake with Marshmallow Frosting

Jan 31, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was the first "from scratch" cake I have ever made and it was a huge hit! The chopped chocolate added a great chocolate flavor without big chunks like if you used chocolate chips. However, I'm sure they would be a fine alternative. The texture was great, not too heavy. As other reviewers said, my layers were also done in 35 minutes. I used...

I only made the fish, and it was excellent! So crispy and flavorful without frying! I didn't have chives, so I used fresh parsley. Easy enough for a working mom on a weeknight. Everyone loved it. I will be making this again!
