OMG...sounds so fancy but it is really so easy! For a variation, try adding field mushrooms (any kind that you like) and sundried tomatoes. If there's not enough meat for you in this dish, try topping it with blackened fish or a slice of pork tenderloin. Almost a five... what an easy and fantastic way to simplify a tough dish like paella and make it "everyday". The flavors in this dish are EXCELLENT. I would say that I'm not sure it makes 8 servings...maybe more like 6 depending on your appetite, but trust me...you won't have any leftovers!!
