Reviewed Engagement Roast Chicken
"great roast chicken option! SO moist and flavorful. I am stumped by the bad reviews. I stirred the onion/lemons 2-3 times during cooking to make sure they stayed coated w/liquid and used 9x13 glass pyrex for 4.3 lb chicken - 75 minutes exactly. Instead of making the gravy I moved onions and some of drippings to another pan and simmered with stock and wine for about 15 minutes, poured over cut chicken. Would definitely make again.
