"I made this cake and thought it was easy, cooked to a nice texture and wonderful eating just as is. I might add chocolate or toffee chips next time and reduce amount of coconut in half to give it a chocolaty flavor as well. But really thought it was a perfect, no muss cake, especially easy mixing by hand.""
