"I had never had parsnips before and had no idea what to do with them. I took the suggestion of the thyme from this recipe and used regular butter. I steamed the parsnips and then just pulsed them in the food processor with butter and thyme. It was easy and delicious! "I absolutely agree, this was an amazing dish, the flavors complement each other so wonderfully! I may even mix it up with pasta or stuff it in chicken breast next time, it is so versatile, cannot wait to make it again. Make sure not to overcook the ciabatta bread (I did :-( )
