Reviewed Perfect Roast Turkey

"Amazing. I hate turkey as a rule, and I made this for my first Thanksgiving dinner. I brined it first with some cut up lemons, oranges, salt, and brown sugar (Emeril's recipe for brined turkey). I then followed Ina's instructions exactly. I even overcooked the turkey a bit ... the breast was 180*F when I pulled it out (oops) and it was still so moist. I couldn't believe it ... I actually LIKED turkey! I will always make this exact recipe from now on. Thanks!

Reviewed Ciabatta Stuffing with Chestnuts, Mushrooms and Pancetta

"I prepared this recipe exactly as written. Everyone at my Thanksgiving table liked it except for me. I was hoping to really taste the pancetta, but its rich flavor was lost in the strong flavor of the parmesan and the sweetness of the chestnuts. Overall, I felt that the stuffing was sweet instead of savory, and I suppose I just prefer a savory saltier stuffing instead of a sweet stuffing. I did enjoy the texture that the chestnuts contributed (whole, peeled, cooked chestnuts at trader joe's were rather affordable) so I would not recommend leaving them out or replacing them with mushrooms. I do not plan on making this again, at least not as written. Plus, it was quite expensive to make, so I think I'll stick with something a little more economical next time. Thanks anyway, Giada.
