Amazing. I hate turkey as a rule, and I made this for my first Thanksgiving dinner. I brined it first with some cut up lemons, oranges, salt, and brown sugar (Emeril's recipe for brined turkey). I then followed Ina's instructions exactly. I even overcooked the turkey a bit ... the breast was 180*F when I pulled it out (oops) and it was still so moist....

I prepared this recipe exactly as written. Everyone at my Thanksgiving table liked it except for me. I was hoping to really taste the pancetta, but its rich flavor was lost in the strong flavor of the parmesan and the sweetness of the chestnuts. Overall, I felt that the stuffing was sweet instead of savory, and I suppose I just prefer a savory saltier...
