This is a great weeknight recipe, even with making the sauce, it doesn't take that long. And if the sauce is made in advance, it's really quick. Everyone loved the dish. I will definitely make it again. I used tomato paste because I'm not a fan of the texture of chunky tomato in my pasta dishes, and it came out perfect.

Cheese grits are one of my favorite breakfast foods. I love this recipe. I've made it four times now. I was making it w/ hominy grits, but now I live in a place where no such thing exists, so I bought polenta and just made it with polenta, but 1/4 the recipe for two people. It was still good.
