My variation of this was to replace the pancetta with a couple of Italian chicken sausages diced small. Also I didn't have sourdough but I made fresh homemade focacca bread and put some of it in the soup. It was absoloutly wonderful. Best soup ever."

I made this 5 star by making a few changes. I added the zest from the whole orange as well as it's juice. When sauce is done I add 2 tbs corn starch to thicken it then add to potatoes.
