It was very good! I used frozen corn that I defrosted & patted dry before carefully broiling. I roasted the tomatillos and onion together like she did on the show. I left out the hominy because I forgot to buy it. I don't think we missed it at all. Served with crushed tortilla chips, shredded cheese and plain greek yogurt instead of sour...

This was really good and not as heavy as other corn cake recipes because it's mostly corn! I used fresh roasted corn, about 1/2 cup regular shredded mozzarella plus two wedges of Laughing Cow Queso Fresco & Chipotle which gave it a nice kick.
