Reviewed Baked Macaroni and Cheese
"Excellent dish. A few things to note that vary from the recipe here and the show. Using a saute pan or large skillet to make the "sauce" is very important. Also I found that whisking the flour in with the butter for 5 minutes and then adding everything but the milk (ending with the onions) made a huge difference. Once the onions are added it will be a thick paste - add the milk and whisk while the sauce thickens. Right around the 8 minute mark, it starts to get thick and by the time you get to ten minutes, it's magical... Whole family gets excited when I cook this up. Alton... you are such a treat to watch and learn from.

"Was looking for a great tasting meal without spending too much money. Found this recipe and WOW, it is really good. Aside from the porcini mushrooms being a little pricey, this dish was everything I was looking for. The family loved it! I did make a minor change by decreasing the salt seasoning when the portobello mushrooms were added and used a little soy sauce instead. Thank you Rachel for a great recipe!

"I don't think the book was real - it had a picture of Alton lifting weights on the cover. I have it recorded and will check tonight when I get home. "Buff (something)" was the title - that is why I figured it wasn't a real book, just a prop for the show.
