The first time I made these, it was for a party and I used mini muffin pans. They were a huge hit and delicious. Now when I make them at home, I make them in silicone muffin cups without the crust. Still really tasty, even without the crust, much healthier, quicker and less messy since you don't have to deal with the crust!"

This is my go to corn muffin recipe. So quick and easy and uses ingredients that I almost always have on hand. I use regular muffin tins and they come out perfect. I also use powdered buttermilk (that you can keep in the fridge and stays good for a long time. Great recipe!"

So Good! I have made these a number of times and they always turn out fabulous. Agree with other reviews, they only need to boil for a few seconds. I put two in and take the first out as soon as I put the second in. Other than that, they always turn out perfect for me!
