The problem was most likely the packaged flavored oats you used. Those are instant oats and are much more processed than regular old fashioned oats. Therefore they can not absorb that much liquid which would result in a very runny batter, too moist to crisp up. Also, don't use steal cut oats or you will have gravely waffles.

First time the breading came off while turning as others described. As mayo is egg based, the egg needs something to stick to. So, just like dredging for frying, I coated the pieces lightly in corn starch first, then the mayo, then the panko. I flipped using the leg bone rather than grabbing the meat. I ended up with a much better result.

You're right, panko does not work in these baked recipes. Sometimes I'll do what my grandmother did, use crushed Ritz crackers if I don't have corn flakes. The panko is too dry, the buttery crackers work great.

The issue I have is never put seasoning in the flour. It's just a waste as it never seems to adhere to the meat. I always season the meat directly before dredging. Auntbea09 is right about the corn flake recipe on the box. Just tweek the seasoning how you like it and it always comes out great.

Simple and awesome. My daughter is a sea food junkie. It gets pretty pricey when eating out. This was inexpensive in comparison and came out great. Plus, I made it pointing out Mother's Day is coming up and I just made one of her favorites. (just to throw in a little emotional blackmail on my 21 year old.) :)

Made this today cutting the recipe in half as we didn't want to be eating beans all week. So halved, it called for 2 cups of water and 2 cups of stock. Taking others advice about it being too much liquid, I used only 3 cups total. After 3 1/2 hrs, I had to add more water. An hour later, had to add more again. Eventually ending up using 5 cups...

Thank you for providing a recipe that uses dried beans. I can't tell you how often I am frustrated at recipes that called for cans of ready made baked beans, just adding a few ingredients to modify it. That I don't need a recipe for, I can figure that out on my own. I prefer dried beans and a from scratch recipe so I can control the sugar and salt....
