"We absolutely loved this soup! I did add one clove of garlic with the onions and celery. My husband did not like the lemon - said it overpowered the soup. I thought the lemon was a great addition. Try the soup before adding the lemon so you don't share my husband's sentiments. This really is health in a bowl! AWESOME!"

"Total yumminess! I picked up local eggplant at a farm stand - awesome in this recipe. I also peeled the eggplant. I agree with the reviewer who said 3-minutes is too long to fry the eggplant. I cooked it for 30 seconds a side and it was perfect! Jarred sauce works just as well as the recipe included - go for it in a pinch.""

"This was really good. I will definitely make it again. I split the cous cous in half and did a kid version with the chick peas, spinach, parmesan and dried cranberries. This way I had an adult version and a kid version. It went over well! Next time I plan on substituting the cranberries or currants with sundried tomatoes - this would help balance the sweetness of this dish. "

"This is a nice variation for butternut squash soup. I love the crostini and recommend using a larger diameter loaf of bread so you have lots to dip in the broth. I don't have an immersion blended and used my food processor. It worked fine, but it would be better to have an immersion blender - less mess.
