"Made this for dinner last night and my boyfriend and I loved it. I used less mint (about 1/4 cup) than was called for and felt that it still had mint flavor without being overpowering. I also used grape tomatoes instead of cherry because I love cooking them whole and having the pop of flavor versus a cut up tomato. Great recipe, so easy to make, and I'm looking forward to leftovers for lunch today!!"
