“Outstanding. I made one change - substituted a blend of Fontina and Provolone for Mozz, because it was what I had on hand. Also, for me, plain Mozz is too bland, even with generous Parm on top. “I used this recipe on a single large rack of regular spare ribs and it was perfect. The sauce was great - i added a touch more sriracha after tasting.
Also, for the last 20 minutes I kicked up the heat to about 300 to get some carmelization.

The recipe isn't clear on this, but I wouldn't put the mussels in immediately after adding the canned tomatoes. Canned tomatoes in a marinara need about 20 minutes total cooking time to develop flavor. So I added the mussels...”
