"Super easy! I'll admit I was hesitant about the ground chicken, but I couldn't even tell it was ground chicken instead of beef. Lots and lots of flavor! I substituted the tomatoes/hot sauce for medium salsa, and used regular flour tortillas. I also added more corn, and used a yellow onion. It was delicious!

"Pretty moist and fluffy for a low-fat cake, but my husband and I didn't like the spices in there. If you're not a fan of a strong spice like cardamom (or nutmeg) I'd leave it out. Otherwise I was pleased!"
