This was delicious. The prep is very time consuming. I used to hesitate cooking anything with this much time in preparation and then I figured out how to make it much easier. I prep anything I can the day before, chop and measure and put in plastic bags and this way I am half way ready to put it together and I dont panic over the time it takes...
