Reviewed roasted eggplant caponata

Feb 12, 2014 on FoodNetwork.com

This caponata will be a regular base recipe for me. Made a pizza with it as the base and my husband loved it. Next made a vinegrette with fresh tomato and diced jicama to pour over iceburg lettuce. These were both great and have lots more ideas. Thanks, Ina

Great reminder that brining is the way to go with pork. This was the juiciest, most tender pork loin, ever! I used onion, green peppers, yellow peppers, too, during the roasting and the
sandwich was wonderful. Will use the leftover pork for tacos tonight and know they will be
great. Thanks, Jeff"
