Reviewed Pizzocheri Pasta Basic Recipe

"Pizzoccheri of Valtellina IS NOT MADE WITH EGGS. Furthermore, it is a thick pasta and should not be rolled to the thinnest setting, but TWO settings lower. If you wish to make proper pizzoccheri I suggest you search for another recipe. This is not it. Sorry.
If you run a search on "valtellina.it/eng" you will find a site focusing on the region and which offers the recipe for the real deal.
