Reviewed baked penne with roasted vegetables

My favorite pasta dish! A real winner for vegetarians and meat eaters alike. I substitute Chinese eggplant for mushrooms and use regular mozzarella as I don't care for the smoky flavor. Generally I half the recipe using about half of the listed ingredients and one jar of Barilla Marinara (my favorite jarred sauce). Really good leftover too.

Previous reviewer...the reason your cake didn't turn out is because you used 2 CUPS of butter. The recipe calls for 2 STICKS of butter. Oops.

This is a great main dish salad. I made it with halved grape tomatoes rather than sun dried. Liked the added freshness. This salad is good the next day even after being tossed with dressing.

Good cake but must take out long before recommended baking time. I took mine out at one hour 10 minutes and it is definitely done. Next time will bake for five mins. less than that. Also, too sweet for my liking even without adding the glaze.

Try replacing the water with coffee (I use leftover A.M. coffee). Really enhances the chocolate flavor, but doesn't have a strong coffee flavor at all. We call this recipe Texas Brownies. Delicious."

Really fast to put together. Yummy results. I made mine in one large baking dish rather than ramekins and it turned out great. Next time I will cut back on the sugar as we prefer less sweet desserts. I will add extra almonds to the topping as it really added to the dish, and cut back a bit on the extract.""

FANTASTIC! My favorite is to use the leftovers the next day in a scramble for breakfast. Simply heat up leftovers in a skillet for a few minutes, add eggs, and scramble together. Delicious with fruit and bread for brunch.""
