OH, also, it is important if you make it ahead to not put panko, french fried onions etc. on top until right before baking, otherwise they will get mushy!

OH! And the tip to soak the bird in a sink full of water for 15 minutes is critical! The turkey was not salty and neither were the drippings. I saw the Facebook post "reminding" us to not skip that step��� made me laugh because it IS critical!

My turkey, using this brine was the best turkey ever! I used a fresh turkey, so brining was important as it wasn't injected with a saline solution like a Butterball or other commercial brand. I picked up a specially designated brining bag at Bed Bath and Beyond for $5 and it worked beautifully and was easier to keep in the refrigerator in comparison...

I will never, ever make another recipe again- this is PERFECTION! I don't like chunks of onion in my gravy so I ran it through the blender and made it the day before (I had homemade chicken broth on hand). On Thanksgiving I just reheated it and mixed in the turkey drippings prior to serving. Don't skip the cognac! It is critical to the richness....
