Forgot to add that I squeezed the juice of 1/2 a lemon over the chops after taking them out of the oven and removing them to a warm plate. Then let them rest 15 min. If you want your chops to be medium, remove from the oven at 140 degrees. They will continue to cook while resting.

Great recipe! Nice flavor, easy to follow. The reason for 4 rather than 5 stars is that they left out brining. Veal chops are very lean and so benefit from a brine. I find that 90 minutes is enough. The result will be the most unbelievable moist, tender veal chops you can imagine. Brining is a MUST!

Great recipe! I doubled the garlic (we like garlic!) otherwise followed exactly. Delicious! Served it as a side with roast chicken. Big hit! Next time, I am going to add toasted pine nuts. I am going to try cilantro instead of parsley for a change but it';s absolutely great as is."

I filled these with vanilla pudding instead of ice cream. DELICIOUS! The first time I made them, I forgot to return the mixture to the heat as recommended before adding the eggs. The second time and they came out so much lighter. It is really amazing how easy they are to make once you get the hang of it. Thank you for a great recipe!"
