"I had a similar soup at a local restaurant and loved it so I wanted to replicate it. I tried this with some of my own touches and it was delicious. I wanted a vegetable soup so added carrots, spinach, edamame and hominy instead of turkey. I sauteed the carrots and sweet potatoes with the onions. The broth, which makes the soup, is all Emeril's.
