I loved this recipe, and the fish received rave reviews from our dinner party! I made a few minor changes: I grilled the fish (no griddle) after marinating for 4 hours, and I only fermented the crema for 8 hours (didn't prep early enough, but was able to keep it at 80-90 deg. for those 8 hours, which would have offset at least some of the time lost)....
