This recipe was EXCELLENT!!! I added a tablespoon of red wine vinegar to the tomato mixture and used green onions as that's what I had. I made it with a side of wheat couscous and poured the leftover juice from the foil packets on top of it - it was delicious and I'll be making it again!!"
