I was pleasantly surprised with this recipe. I have only used eggplant in Tai recipes and soups because I didn't want to fry it and I know eggplant taste good only if it soaks up flavors from other ingredients. this recipe was amazingly yummy. I will make it often. I had a bonus; I used a jar pomadoro sauce and I put fresh herbs in it and it worke"
