Reviewed sourdough biscuits

6 days ago on

I halved the recipe, let them rise for an hour, and cooked six biscuits each in two Dutch ovens. It took 30 minutes at 400 to develop golden brown color on top. Meanwhile a nice crispiness of fried dough on the bottom. I also cooked the remaining 3 biscuits on a cookie sheet on the top rack. They were ready in 20 minutes. Good recipe.

Some very fine brats, maybe the best ever. I used regular bacon, MGD beer, dried thyme and rosemary, Whole Foods' in-store made brats, French's yellow mustard, and left out the parsley. Will leave out the chicken broth next time, because it didn't add much and increased the time needed for the reduction. I simmered them gently for an hour.

Reviewed Crab and Brie Casserole with Wild Mushroom Crumb Topping

Found this while trying to recreate a crab noodle casserole mom used to make. Really light and easy. The panko and mushroom topping is great. If you like it saucy, you might want to add some milk and more cheese.

Terrific. We riffed on it a little to use ingredients on hand. Made a half a recipe for the two of us in a 8" circular glass casserole. Used homemade sourdough, spread with leftover refried beans and sweet Italian sausage. We're at 7000' altitude, cooked covered for 40 minutes, uncovered for 20 minutes. Perfect."

The proportions are totally off for this recipe. If you're trying to emulate the finished production on the show, make about one-half the filling. You can make your own dough using Giada's simple pizza dough recipe."

Need the mix. That's where all the baking powder and flavor is. Tried cutting in butter, but it wasn't enough. Looked at ordering the mix. It's only a few bucks a bag, but $13 to ship. Back to Bisquick."
