Reviewed Butternut Squash Soup

Coming from a guy who HATES squash ... I LOVED THIS! ok - so I had to make changes simply do to supply issues. BUT, it turned out yummy!! So here's how I did it:
Stilled oven-roasted the squash, except I had 2 lbs of pre-cubed squash. I didn't have shallots, so I used a half of onion cooked in 2 tbsp of butter, then added "almost" 2 cans...
