Reviewed cowboy chicken casserole

8 days ago on

This is delicious. The layer made by the tortilla chips and poaching liquid is really nice. Except for for using 1 lb. of boneless skinless thighs and 1 lb. breasts, I made the recipe as written. This is a fun recipe to make and, because it makes a large amount, is good for several meals. As with all Emeril recipes, it is packed with great f...

Reviewed roasted sweet potatoes with honey and cinnamon

Jan 15, 2015 on

These are easy, fast and very good; what more can you want? I am a lover of all things buttered, yet did not miss it with these sweet potatoes at all--even I'm surprised!!!!

Reviewed greek orzo and grilled shrimp salad with mustard-dill vinaigrette

Sep 4, 2014 on

This is an excellent recipe as written. As noted by the previous reviewer, this is a great way to use fresh garden produce. I would like to point out that this serves 4 if everyone is a hungry lumberjack; otherwise, there's enough for 8 people, increasing the shrimp accordingly.

Reviewed chicken in mustard

Feb 25, 2014 on

This was delicious. I did not remove the lid half way through (to insure I had enough of the fabulous sauce), and only used 8 oz. of whole wheat egg noodles. The meal was a hit with everyone; we found the amount of mustard just perfect. I agree that it would be great with rice and will try that the next time--and there will be a next time!

Reviewed Spicy Butterscotch Pudding

Though this is certainly not a traditional butterscotch-flavored pudding, it is very good and wonderfully creamy. It is a very fast and easy dessert to put together with readily available ingredients. I will be making this again.

Reviewed Chocolate Chunk Blondies

Jul 29, 2013 in Food Network Community Toolbox on

This is a very good recipe for blondies, the chocolate chunks adding a nice twist. I used a combination of semisweet and milk chocolate chunks, which worked quite well. The recipe baked up beautifully as written; I had no problem with them being either greasy or not setting up."

Reviewed Old-Fashioned Apple Crisp

Feb 28, 2013 in Food Network Community Toolbox on

Other than changing the type of apples due to availability, I made this recipe as written. It is delicious. I made this for company and it was a big hit. The citrus is muted, NOT overwhelming and is very important to the overall flavor. I definitely recommend giving this a try--you won't be sorry."

Just a basic, excellent recipe that makes use of leftover mashed potatoes and leads to a great breakfast with some fried eggs. "

These are easy, quickly put together, and people love them. What more can one want?"

Reviewed Stewed Chicken and Sausage

Sep 14, 2012 in Food Network Community Toolbox on

Another recipe from Emeril with wonderful flavors. This is a great change-of-pace way to prepare chicken and sausage, a wonderful combination! I used a couple pounds of boneless, skinless thighs since they stay so flavorful and moist, and served it over rice. Delicious."

Reviewed Seedy Crisps

Aug 30, 2012 in Food Network Community Toolbox on

These crackers are wonderful, a huge hit with my husband. I think they are best baked on the far side of the time, a bit more color and a bit more crisp. Excellent just as the recipe is written."

Reviewed Corned Beef and Cabbage

May 2, 2011 in Food Network Community Toolbox on

This is an excellent recipe for corned beef. I did not add the cabbage (as I make another cabbage recipe when I make corned beef), but I did make the root vegetable side dish, which was very good. This is an easy recipe to make and brings happy smiles to the faces of those at the table!"
