Followed this recipe as written & it is really good! Just the right amount of spicey & sauce. It easily feeds 10 people. I will definately make this again!"

Reviewed Shrimp and Sausage Jambalaya

This is an easy recipe that feeds a lot of people! Spicy & flavorful. I asked the deli to slice the ham thick, so cubing it was no problem. I like spicy food so I used a jalapeno pepper & added some cayenne. I followed the rest of the recipe as written. The rice turned out great. If you cook the rice on too high of a flame it will turn out hard....

Reviewed Chicken With Sun-Dried Tomato, Eggplant and Basil

Mar 14, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was delicious! I put the eggplant in a casserole container with a glass lid & it was not over cooked in the microwave. The picture shows a huge slice of eggplant but the recipe said to cut it in to chunks; that's what I did & it worked out great. I followed the recipe as written, except I eyed the amount of ricotta, and used a spoon to smear...

Feb 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is a fast, inexpensive, easy week night meal. I made it exactly as written & it turned out great. I was surprised how flavorful it was! It is not spicey at all, so add more jallapeno if that is what you are looking for.

Reviewed Marinated Portobello Stuffed Whole Chicken with Roasted Sweet Potatoes and Red Onion

Feb 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is Wonderful! Great flavor. The chicken was juicy & the mushrooms complimented the chicken perfectly. The sweet potatoes & red onion were delicious! I cut my potatoes to 2" pieces, and they came out perfect. I also didn't put the chicken on a rack, & I think all the juices from the chicken helped make the potatoes & onion more flavorful....

Reviewed Pat's Roast Beef

Feb 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

I thought this was a good recipe that was easy to prepare & did not call for a lot of ingredients. I would not stress out about the cut of roast. I used an inexpensive cut & it came out great. I will definately make it again. Be sure to serve it with mashed potatoes because you will have quite a bit of tasty gravy!

Reviewed Ragu-Stuffed Peppers

Jan 26, 2011 in Food Network Community Toolbox on FoodNetwork.com

I have to agree that 10 minutes in the microwave is too long. Other than that, this is a great recipe. It was still tasty even though the peppers were a little mushy. Just cut the time down to 5-7 minutes & it will be perfect! I like how this one recipe makes 2 meals. We will be using the leftover sauce on pasta later this week. Nice to eat something...

Reviewed Stuffed Poblano Chiles ("Chiles Rellenos"

Jan 18, 2011 in Food Network Community Toolbox on FoodNetwork.com

These were really good, and the video was helpful. Don't stress out about peeling the chiles perfectly, it wont matter. Just make sure they are somewhat blackened & then put them in a bag. I think the most important thing in this recipe is to make sure that the oil is really hot. I am glad I used my thermometer because I was surprised how long...

Reviewed Chicken Cacciatore

Jan 18, 2011 in Food Network Community Toolbox on FoodNetwork.com

I have made this twice already, because it is so good! Because you brown the chicken in flour first, the sauce comes out thicker than some of the other cacciatore recipies. I used to make Giada's cacciatore, but this recipe is better because of the rich sauce.

Reviewed Jalapeno Roasted Chicken with Baby Broccolini

Jan 18, 2011 in Food Network Community Toolbox on FoodNetwork.com

Easy to make and a nice change of flavor! I followed the recipe, except I added an extra jalapeno for more kick. Served it with rice & beans. Will definately make this again!

Very good stuffing. Worth the extra effort!

Reviewed Pozole Verde

Dec 20, 2010 in Food Network Community Toolbox on FoodNetwork.com

I gave this recipe a 4 star rating because I had to make adjustments, but it is delicious. First of all, traditional pozole is made with pork, not chicken. It is also a lot of work to make such a small batch. Here are my recommendations:

4 Lbs pork shoulder, omit the chicken
3 onion quartered, 3 onion finely chopped

Dec 20, 2010 in Food Network Community Toolbox on FoodNetwork.com

Very good and rich soup. The crispy shallots are worth the effort. I froze the left over soup and the shallots seperately. When I wanted the shallots, I just microwaved them for 30 seconds and they were ready to go. The soup froze well too.

Dec 20, 2010 in Food Network Community Toolbox on FoodNetwork.com

This was very easy to make and tasted great. I used Guiness beer, and would recommend it. This is an inexpensive cut of meat and a nice recipe that made the meat very tender.

Reviewed Horseradish-Crusted Brisket With Carrots

Dec 20, 2010 in Food Network Community Toolbox on FoodNetwork.com

This was excellent! I followed the recipe as written. My only suggestions would be to use a food processor to grate the horseradish because it is messy. The food processor did it in a snap. Also, when it came time for the parchment paper I just cut around the lid of my dutch oven. Not hard to make but time consuming. It is worth it!
