Reviewed Shrimp and Sausage Jambalaya

"This is an easy recipe that feeds a lot of people! Spicy & flavorful. I asked the deli to slice the ham thick, so cubing it was no problem. I like spicy food so I used a jalapeno pepper & added some cayenne. I followed the rest of the recipe as written. The rice turned out great. If you cook the rice on too high of a flame it will turn out hard. It is also important to measure the rice & chicken stock. If you do this the consistency is perfect. I loved how the shrimp steamed. It made a big difference to the texture of the shrimp. Overall, a well written recipe. I definately recommmend!"

Reviewed Chicken With Sun-Dried Tomato, Eggplant and Basil

"This was delicious! I put the eggplant in a casserole container with a glass lid & it was not over cooked in the microwave. The picture shows a huge slice of eggplant but the recipe said to cut it in to chunks; that's what I did & it worked out great. I followed the recipe as written,except I eyed the amount of ricotta, and used a spoon to smear it on the chicken. I put the ricotta on the chicken last & then covered the pan again for about 5 minutes on a low simmer because I didn't want cold cheese on warm chicken. I served the chicken over Trader Joes Garlic & Herb Pasta, & poured the sauce from cooking over the whole thing. The only other thing is this served the 3 of us without leftovers, not 4 people. Great recipe & easy to make!"

"This is a fast, inexpensive, easy week night meal. I made it exactly as written & it turned out great. I was surprised how flavorful it was! It is not spicey at all, so add more jallapeno if that is what you are looking for.

Reviewed Marinated Portobello Stuffed Whole Chicken with Roasted Sweet Potatoes and Red Onion

"This is Wonderful! Great flavor. The chicken was juicy & the mushrooms complimented the chicken perfectly. The sweet potatoes & red onion were delicious! I cut my potatoes to 2" pieces, and they came out perfect. I also didn't put the chicken on a rack, & I think all the juices from the chicken helped make the potatoes & onion more flavorful. I had some extra mushroom pieces & put them in the cavity of the chicken. This is so good, I will definately make it again! I may even try this recipe using a turkey.

Reviewed Pat's Roast Beef

"I thought this was a good recipe that was easy to prepare & did not call for a lot of ingredients. I would not stress out about the cut of roast. I used an inexpensive cut & it came out great. I will definately make it again. Be sure to serve it with mashed potatoes because you will have quite a bit of tasty gravy!

Reviewed Ragu-Stuffed Peppers

"I have to agree that 10 minutes in the microwave is too long. Other than that, this is a great recipe. It was still tasty even though the peppers were a little mushy. Just cut the time down to 5-7 minutes & it will be perfect! I like how this one recipe makes 2 meals. We will be using the leftover sauce on pasta later this week. Nice to eat something healthy like cous cous for a change. Will definately make this again.
