This is definitely a no-frills mashed potato recipe, which is what it promises and is what it delivers. I would give it 5 stars because it accomplishes what it advertises with one exception - the process. I agree with mcangelcat in that putting potatoes in already boiling water is questionable. Not sure why that is specified; seems a lot more hazardous...

I'm trying to find just one of Alton's recipes that don't work well but I'm thinking that's hard to find as this piecrust is so easy and comes out so well. Just don't let the butter and lard melt! I did not use his zip lock bag method, I rolled it out on my Silpat baking mat. As long as you roll it out quickly, you should have great results.
